Keto type Seri Muka
Pandan Layer
- 6 pieces pandan leaves roughly cut into squares
- 1/2 cup water
- 1.5 tbsp Zerro erythritol
- 1.5 tbsp JoyMix MCT oil
- 1/8 tsp vanilla extract
Coconut Layer
- 100 ml boxed coconut cream
- 1/2 tbsp Zerro erythritol
- 1/8 tsp vanilla extract
- 1/8 tsp Himalayan pink salt
INSTRUCTIONS
Blend pandan leaves with water.
Strain the blend. Squeeze out the blended pandan leaves to extract all the juices.
Blend the pandan extract with the rest of the pandan layer ingredients.
Pour pandan mixture into a freezer-safe mould. Freeze for 3 hours to set.
To prepare the coconut layer, blend all the ingredients together.
Pour coconut mixture onto the set pandan layers in the freezer-safe mould.
Freeze overnight (or for at least 6 hours) to set.
